extra-virgin olive oil... put it in the pan, and while that starts to warm, we're going to cook our lasagna noodles. now the noodles i've chosen are made from artichoke flour. so it's really kind of nice. it's jerusalem artichoke flour so it's very light pasta and it's great for people who have sensitivities to wheat. so i've got some boiling water i'm going to add some salt to the water. the salt helps to hold the pasta together so it doesn't get too soft and fall apart. and a tiny bit of oil helps to keep the pasta from sticking. okay so we're going to put the noodles in and they'll gradually just kind of sink down. don't get in here with your spoon like, pushing the pasta down. let it gradually sink into the water. once you have your noodles in, don't cover the pot again. it will cook all over your stove and make a mess. the starch will all bubble over. so just let it kind of cook and then we'll check it out. okay now we're going to add our garlic and onions. start with our yellow onions. very traditional. and we'll press some garlic through. i love these new garlic presses that

. you might not know the name darden but that's red lobster and olive garden. these are-two are like a physical. they tell us all about the health of the consumer. first of all-w nike the key metric we use here is something called futures orders. what does that mean? nike orders a futures ordering program that allows retailers to order product five to six months in advance of delivery. and these numbers, while not exact, tend to predict actual sales. we don't want nike earnings. we're not focused on that. we're focused on futures. the street expects futures orders to be down 5%. that's on a constant currency basis. and that's very tough compares. you see, because last year we had the beijing olympics and the 2008 euro cup. and we also have a less favorable exchange rate. so we're going to have to get more negative about the health of the consumer if we see bad futures numbers from nike. obviously, goldman's making us more bullish. how about darden? the other difficult part because it's really a nationwide consumer number. here we'll be looking at the same-store sales for red lobster,

your water, and put a little bit of olive oil so the macaroni doesn't stick and holds its shape. the thing to remember, though, when you're cooking for kids is sodium. if you're cooking with a lot of salt, i mean for everybody, but especially for kids, they're little versions of us, so if you're cooking with a lot of salt in their food, they tend to crave more sweets, they don't grow right. it's just not a good idea for them. so, keep your salt a little bit lighter. so the macaroni's gonna cook, and we'll use that dish later. and in this pan, we're gonna start the cheese sauce. so you're gonna take a little bit of olive oil... take some of our vegan cheddar... i'm gonna grate in some of the vegan mozzarella. we're gonna add some almond milk to this and cook it over low heat while everything melts. grating the cheese helps it to melt a little bit better. when you're looking at soy cheeses in particular, make sure that you read the label. some of the vegan cheeses don't melt really well, but some of the cheeses just say that they're dairy-free. that means that they contain somethi
